Could you mail me a sample of the finished product, MOCraig? I would like to make sure it would be worth the effort, before I give it a try. You can freeze it if you want and I`ll dethaw it when it arrives. Thanks.

MOCraig,
Here is a suggestion you might want to try. If you have a vaccum sealer, try putting your meat and marinade in a vaccum sealed contianer or bag overnight. You will find the vaccum opens the pores of the meat and gives you a better flavor.

I got mine at Christmas time this last year for about $100, and that included a roll of 100 quart size bags. I really like it alot. There is an additional attachment that goes to an 8X8 glass dish. It's for marinating.

I make jerky on a cookie sheet. Turned out good, but most of it got moldy. Refrigerate your extra bags, don't leave them in a pantry like I did. Image
